Magic Bars

Every Christmas my Mom makes a ton of sweet treats. My favorites of her many recipes have to be the fudge and her magic bars. This year I decided to make her magic bars with my special twist.
Ingredients:
1 yellow or even chocolate cake box mix
1 stick of butter
1 bag of milk chocolate chips
1 bag of white chocolate chips
1 Can of sweetened condensed milk
- For fun you can use colored white chocolate chips they ususally have green and red around Christmas
Optional Items
Coconut
Nuts (walnuts or almonds work best)
Peanut Butter Chips
Carmel Pieces
Butterscotch chips
The easy how to:
preheat oven to 350 degrees
Melt the stick of butter
Mix butter and cake mix
push into greased 9x13 pan
bake for 15 mins
take out of oven and layer all you chips, nuts, coconut etc.
Pour condensed milk evenly over top
Bake for 15 more mins or so

2010 in a nutshell and 2011 goals

In 2010 I managed to accomplish a lot. I didn't get to all of my goals for the year, but that's ok I can work on them this year :)
Some of the major things of Twenty-Ten

January- finished nursing school as Valedictorian

February- Went to Puerto Rico with Josue and the Caribbean island cruise, I also turned 25 :)

March- Welcomed our first TKN niece, Elliana into this world

April- Graduated from nursing school, and had my fun party! Hayden and Emiliano were born!
May- Took my NCLEX exam

June- Josue and I had a little get away to Las Vegas

July- Celebrated Josue's 27th at home with a small party. Found out I passed the NCLEX

August- Went to Maui with Josue and friends. Celebrated our 2nd wedding anniversary.

September- TKN niece, Abigail. Lost an amazing woman, my Aunt Jamie. Also I got my first nursing job!

October- Did the woman's cancer walk with my Cousins and Aunts.

November- Our home was broken into and I did some real soul searching. Found a great new church!

December- We went to Big Bear with friends and Kimi, for Josue's first ever trip to the snow!

Of course there was so much more that happened in 2010, but those were the things that really stood out.

In 2011 we have so much going on! I have 4 friends who are pregnant, and more that are trying ;) We want to go on vacation before buying a house or having children. We want to get the heck out of Long Beach, and buy our first home. I need to find a job, and we are hoping/praying there are no more layoffs at Claim Jumper. I also hope to accomplish more from my 30 before 30 list this year. Starting with the lose 30 lbs. If I want to have a baby I need to do that first! No being a huge pregnant lady for me!

Ground Beef or Turkey Eggrolls

This is my favorite Eggroll recipe. It takes a few steps but is actually pretty easy.

I don't have an exact recipe as I usually just make it as I go but I will to the best of my ability share the recipe with you.
First you will need
Eggroll wrappers
Soy Sauce
Head of cabbage
Shredded carrots
Ground Beef or Turkey
Small dish of water
Oil for cooking
Tempura Dipping Sauce (optional)




First brown your ground meat with a little bit of soy sauce. Shred/chop your cabbage. Add cabbage, carrots and to taste soy sauce to the pan of meat.


When mixture is done cooking and looks like above picture you can start to assemble your eggrolls. Place wrapper at a diagonal. Place meat and veggie mixture in the center. Wet all corners of the wrapper.

Fold like this picture and create a roll




After this process you can let them sit the fridge for a while or go straight to cooking. You can bake with a little oil, boil them, or the best (& worst) way is to pan or even deep fry them.


I like to enjoy them by dunking them into tempura dipping sauce, yum!
I've also made them by adding additional veggies like celery or even broccoli

Meet the newest member of our family...

BENTLEY


We adopted Bentley from a shelter in early November. We are so in love :) So far he has been a good dog with a few puppy tendencies. We've taught him how to sit and stay as well as potty training. Hopefully we can soon teach him how to walk on a leash so that he becomes a good walking buddy for me.

30 Before 30~ Finding a great church

A while back I created a list of 30 things I wanted to accomplish before I turned 30. Since they were in no particular order I started with #29 to find a great church. Shortly after making the 30 before 30 blog my house was broken into. It was heartbreaking, and scary all at the same time. In the middle of the day by breaking a door in the sun room somebody came into our house and stole all of our jewelry, most of our electronics, and much more including the feeling of security. Friends and Family were of great support and I cannot thank them enough for their kind words, offers to stay, and even some financial help, so that we could replace some of what was lost. We will never be able to replace the rings that were blessed on our wedding day, but our love for each other will never be lost.
I decided that this was a better time than any to turn to God. Ever since we moved to Long Beach I said that I wanted to find a church where I could feel like home so I finally set out to find one. I started by a mere google search for churches near my house. Then I looked at websites and narrowed it down to 3 churches. I went to United Church of Christ first, and I liked it a lot and felt good about my first visit, but wasn't sure if it was my "home" church or not.
Then I went to Parkcrest the following Sunday. As soon as I got there I felt good about it, but then the sermon started and I realized this was the church I was supposed to be part of. I never even needed to go to the 3rd church. The sermon was about rethinking fear. It was exactly what I needed to hear after my house was broken into. I had felt broken, and unsafe in my own home. The sermon taught me to not allow fear to have the final say, and to be proacive instead of reactive. So we got an alarm system, and a new Dog. My FIL also put bars on the windows. I feel safer trusting God and relying on him in the midst of my fear. So since my first visit I have been attending Parkcrest heartwell campus. The sermons have been amazing and I really look forward to Sunday mornings.

For the Spirit God gave us does not make us timid, but gives us power, love, and self-discipline. 2 Timothy 1:7




ETA: I brought my Mom to church with me last Sunday and it turns out the associate pastor Married my Parents!! And the main pastor Mike interned under my old pastor, the one who married Josue and I. SO I guess this church was meant to be.
